el Puente de Infiernillo. Como se comprenderá estas personas necesitaban alimentarse y la población huancaína y en especial las mujeres proveían el almuerzo y se hizo muy popular el de una de ellas en especial, a la que ellos apodaban la huancaína, que traía unas hermosas papas, bañadas con una salsa de queso y adornadas con huevo. La salsa era preparada con queso o cuajada desmenuzado, mezclado con rocoto sancochado molido y diluido con leche, para darle soltura. Si queda muy espesa se puede agregar un poco de leche hasta obtener la consistencia deseada.&lt;br /&gt;&lt;br /&gt;Servir sobre papas cocidas, cortadas en mitades.
